What are we doing?
“Artisan Bread” is a difficult thing to define. Yes, there are packaged loaves at the store labled “Artisan Bread,” but besides these products- essentially decorative chew toys- what fits the category?
Artisan bread baking is an approach to bread making that utilizes sustainable and minimalistic methods in an effort to preserve flavor from the grain and enhance it.
An Artisan is defined as “a worker skilled in trade, especially making things by hand”
By this definition, Artisan Bread requires a human.
So why is there machine produced and packaged bread labeled Artisanal?
There are many different approaches to Artisan Bread Baking, and any yeasted dough will go through the same ten step process, beginning with mixing, and ending with baking. The methods and timing of executing each step lends great influence to the final product, and each approach could be viewed as its own style within the “Artisan Bread” scope.
But arguably as important as methods of dough processing, is the flour used, and how it was processed.
At w/Heat, all products are made using organic unbleached unbromated patent flour.
In a majority of commercial bakeries, “Artisan Bread” factories, and many pizza shops, chemicals are added to either the flour or the dough for multiple reasons, typically to mitigate the effects of what would be considered poor dough processing practices under different circumstances.
Different additives have different impacts to dough rheology, but are typically used with the same goal in mind - shelf life, production efficency, and making a dough that can handle lots of physical stress in the form of aggressive handling or extreme temperature fluctuation.
The result of this is a yeasted dough product which isn’t much more evolved than a tortilla, despite the polished look.
Digestibility suffers in products manufactured using practices such as these, and a process that would be more complete with time, is replaced with chemicals for faster processing, streamlined workability artisanal looks, and ultimately, better profit margins.
In Artisan Baking, this level of consistency, and a higher level of flavor, is achieved through observance, practice, and planning. Without the use of chemical additives.
Quality selected ingredients are thoughtfully transformed into products that highlight the synergy of their flavor while showcasing different textures.
